Fashion Fabulous Banana Muffins

I made delicious Banana muffins from all of the over ripe bananas that I had frozen in my freezer. You can always take overripe bananas, peel them and freeze them in saran wrap. Defrost, and they  excellent for this recipe. You’ll thank me later. They are delish!!!!


3 extra ripe bananas.  

¾ cup sugar

1 egg slightly beaten

1 tsp. vanilla

1/3 cup melted unsalted butter 

1 tsp. baking powder

1 tsp. baking soda

½ teaspoon of salt

1 ½ cup flour


Preheat oven to 375 degrees.

Mash bananas with two forks, use hand mixer to add eggs and sugar.  It looks a little lumpy but were good so far. Add the melted butter after it has cooled down a bit. 

Mix all dry ingredients in a separate bowl.  Whisk it together so it is blended well. Add to wet ingredients with mixer.  DON’T OVER MIX.

I ALWAYS ADD CHOCOLATE CHIPS! A healthy cup of them.

Bake for approximately 20 minutes.

You can keep these plain or add a crumble topping.  Recipe below.


CRUMBLE Ingredients: (best ever ever)

1/3 cup brown sugar

½ tsp. cinnamon

1 tsp. of vanilla

4 tablespoons unsalted butter melted

1/3 cup flour 

1/3 cup regular oats


Stir dry ingredients into the melted butter. Scatter over any cake or muffin recipe.

Best crumble ever, ever, ever and a day. Double recipe….its delicious!

January Detox Juice Cleanse

Every year on my bi-annual trip to Delray Beach, Florida, I always try my best to reboot, rejuvenate, relax and rethink my dietary choices. I always try to incorporate a 7-day detox juice cleanse. The clarity that arrives after a few days is astonishing to me. I forget how great it feels and almost feel guilty that I don’t do it more than twice a year.

Hope this will encourage you to try it. It feels amazing!

My Tips:

  • Organic fresh juice ONLY for 2 meals.
  • Dinner is low fat protein, veggies and fruit.
  • 10-12 glasses of lemon water.
  • No eating after 7 pm and do not resume any eating except for tea, black coffee and lemon water before 11:00 am.
Seriously feels great. After first day it’s a breeze. The difference in a week is amazing

My Shopping List:

  • Beets – Improved blood flow, lowers blood pressure, detoxes liver, enhances skin
  • Celery – Includes vitamin C, vitamin K and potassium that helps prevent dehydration
  • Wheatgrass – Too many great benefits to write – Google it.  It’s considered “a superfood” and green gold
  • Apple – An apple a day keeps the doctor away.  Period. The End. 
  • Ginger – Reduces inflammation.  Reduces inflammation. Reduces inflammation.  
  • Lemon – Promotes hydration, digestion, weight loss.  It’s a natural cleanser for your inner pipes.
  • Carrots – They are nature’s honey in a juice! Plus vitamin A

Green Juice Ingredients

  • lemon – whole
  • ginger – as much as you like

Was in need of something more substantial, so I went for a smoothie..delicious and filling. You can turn any juice into a smoothie with a banana, ice and a little bit of coconut water.


Green Smoothie Ingredients

  • banana

  • carrot
  • coconut water
  • ice

7-Day Detox Complete!

Yea! I made it. It certainly had its moments,  but so worth it!!!!

Nancy Sinoway’s Granny’s Apple Cake

This is what you do with all of the leftover apples from apple picking.
Easy, easy and delicious……

Here is my recipe:

1 1/4 cup sugar  (I use the organic raw sugar)
1 cup of unsalted butter
2 cups flour
2 teaspoons baking powder
Grated lemon zest 1 tsp.
Lemon juice from one lemon.
4 eggs
4-6 apples sliced, tossed and sprinkled with cinnamon,  sugar and some of the lemon juice.
2 tsp of vanilla
Preheat oven to 350 degrees.
Cream butter, 4 eggs (both room temperature), sugar, vanilla, lemon zest and lemon juice. Beat till light and fluffy.
Fold in flour, baking powder and salt till well combined.
Spoon the batter into a well greased (butter) 9×12 cake pan.
Scatter apples or arrange as you desire. Sprinkle a little cinnamon and sugar over the top.
Bake for 45 minutes. Test with toothpick that center is done. Bake for an additional 15 minutes if necessary.
Each oven is different so keep an eye on it for desired crispness.
It is always delicious!
