I made delicious Banana muffins from all of the over ripe bananas that I had frozen in my freezer. You can always take overripe bananas, peel them and freeze them in saran wrap. Defrost, and they  excellent for this recipe. You’ll thank me later. They are delish!!!!

Ingredients:

3 extra ripe bananas.  

¾ cup sugar

1 egg slightly beaten

1 tsp. vanilla

1/3 cup melted unsalted butter 

1 tsp. baking powder

1 tsp. baking soda

½ teaspoon of salt

1 ½ cup flour

Directions:

Preheat oven to 375 degrees.

Mash bananas with two forks, use hand mixer to add eggs and sugar.  It looks a little lumpy but were good so far. Add the melted butter after it has cooled down a bit. 

Mix all dry ingredients in a separate bowl.  Whisk it together so it is blended well. Add to wet ingredients with mixer.  DON’T OVER MIX.

I ALWAYS ADD CHOCOLATE CHIPS! A healthy cup of them.

Bake for approximately 20 minutes.

You can keep these plain or add a crumble topping.  Recipe below.

CRUMBLE Ingredients: (best ever ever)

1/3 cup brown sugar

½ tsp. cinnamon

1 tsp. of vanilla

4 tablespoons unsalted butter melted

1/3 cup flour 

1/3 cup regular oats

Directions:

Stir dry ingredients into the melted butter. Scatter over any cake or muffin recipe.

Best crumble ever, ever, ever and a day. Double recipe….its delicious!
